Directions:

  • Mix in with salt at a 1:5 to 1:8 charcoal to salt ratio. In 8-10 days, you should see the rind turn completely white. If you see a blue tint instead, this means it's too acidic. If it becomes hairy and gray, there's likely too much moisture and not enough acidity
