This style was the original clear, light-colored beer, dating from the 1840s in the area of Bohemia (now part of the Czech Republic). For this beer, distilled or reverse osmosis water, or other very soft water is greatly preferred. You can do a decoction mash for this recipe, but a single infusion mash works well also.

One of the keys of making a great lager is being able to maintain proper fermentation temperatures. Ferment this beer in the low 50s, raise the temperature for 48 hours to the 60s, and then lager (store cold) for 4-6 weeks. Lagers take a bit more attention to temperatures, and take a bit more time- but the results are worth it! A yeast starter is recommended when using liquid lager yeast for best results.
