BRY-97 American West Coast Yeast was selected from the Siebel Institute Culture Collection and is used by many commercial breweries to produce a variety of different ales. A slightly estery aroma and near-neutral, it will not display malodors when handled properly. It is a flocculant strain, so due to flocculation, it may slightly reduce your hops' bitter levels. Medium to high attenuation.
Recommended Usage: Best when used at traditional ale temperatures after re-hydration. Quick to start with a vigorous fermentation that can be completed in about 4 days above 17 °C. Help settling by cooling and using isinglass and fining agents.
