Chitosan is derived from the polysaccharides found in the shells of shellfish. It has a mild electrostatic property that binds the Chitosan to yeast and other particulates that lead to haze in beer and wine while accelerating the flocculation process.
Usage: Add and gently stirl Chitosan into your beverage, allowing 12-24 hours for the desired clarity. Usual dosage is between 150-200 mL/HL. Use 1.0-1.3 fl oz for a 5 gallon batch.
