Our version of this Vienna style lager is smooth and crisp, with a complex malt backbone that has a hint of toastiness. Enjoyable by the pint at home, on the beach, at the park, or even "dressed" with lime and salt, this recipe is a classic.
This beer is an intermediate/advanced style due to needing a yeast starter (or purchase two packages of yeast) as well as strict temperature control in the low 50s during fermentation & a lagering period in a refrigerator. A diacetyl rest after primary fermentation is recommended, as well as racking to secondary for the lagering period.
In lieu of making this recipe as a traditional lager, a clean well attenuating American ale yeast can be used at ale temperatures.

Style ProfileA nearly forgotten style, a Vienna lager is a German beer style with a rich malty aroma with a bit of toastiness. In the late 19th century, German brewers immigrated to Mexico and they brought some of that Vienna lager style and flavor to their adopted country. Brewed to what the Germans believed was the North American palate, these amber colored lagers were a big hit.
