There's not much that Lalvin RC212 Wine Yeast can't accomplish. With an alcohol tolerance of 12-14% it is a fairly quick wine yeast with fruity/berry aromas and taste. It accentuates full flavor red wines and is the preferred yeast for Pinot Noir. On top of all that it also helps stabilize the color and tannins.
Usage: Ideal Temperature: 68°- 86° F. Expect low flocculation and foam production levels.
